【Recipe/食譜】1. Wash the blue crabs thoroughly, remove the abdomen and cut them in half 洗乾淨藍蟹,移除腹部,切開一半2. fry the crab a little bit, put aside then remove the oil 輕輕炸一炸藍蟹備用3. put a little oil and fry the ginger and garlic until color turns golden 先炒薑及蒜頭至金黃色4. put scallions/green onion in 再加蔥5. put the crabs back in, stir it well 加入藍蟹炒勻6. add Shaoxing wine, stock, tofu skin, and tofu puff 加入紹興酒、上湯、腐竹及豆腐泡7. add sesame oil, pepper, chicken flavor, sugar and soy sauce for seasoning 加入麻油、胡椒粉、雞粉、糖、豉油及老抽作調味8. cover the wok for 10 minutes 關蓋煮10分鐘9. thicken the soup with corn starch 加入生粉芡10. add egg and ground pork 加入蛋及豬肉碎炒勻就完成【Ingredients/材料】15 blue crabs 藍蟹仔15隻4 pieces of garlic 蒜頭4粒ginger 薑 適量5 Scallions/Green Onion 蔥5根4 Eggs 雞蛋4隻Ground pork 豬肉碎 適量Tofu Skin 支竹 適量a bowl of stock 上湯 1湯碗Tofu Puffs 豆腐泡.......適量
