Once you get that, tell them you need a week to think about it which is customary. Then call the national customer service number and request for your EAD to be expedited. Then get an InfoPass appointment and present the letter there. You might be able to walk out of there with a document that allows you to work. Even if the offer is ultimately rescinded or even if you don't even want the job, it doesn't matter. Just get a job. It does not need to be your dream job or a fancy job. You need a job offer to get the EAD expedited.
It is OK to not have a SSN right away. All they can ask you by law is "Will you now or in the future require sponsorship for employment visa status?". You will answer "no". That's the end of that. You need not say anything else. For them to be able to legally ask to see your EAD or any other document, you need to be hired first. Basically, you bring it in the first day of work. They fill out the I-9. It's illegal to ask an applicant to show proof of employment authorization before then. If they tell you, "we e-verify", you say "that's great". They may not e-verify you before hiring you. Just get any job, even if you don't want the job.
